DIM SUM

This time around we wanted to host a pop up that didn’t fit into the traditional mold a multi-course dinner. So in the free spirit of dim sum, we created an eclectic mix of small dishes meant to be eaten on impulse. Any dish that catches your eye – just grab it!

Thanks to Sycamore Den for hosting us and of course our partners Barçon Cocktail Co. for the delicious libations.

THE CREAM EVENT

In March of 2013 we headed north to LA to take part in the most trend-setting and mind-blowing {not to mention FUN} wedding extravaganza around. The Cream Event is an amazing showcase of creative, talented and passionate people that make the wedding world so vibrant and exciting. We were honored to be included in the cream of the crop.

Here’s a glimpse at The Vetted Table in action . . .

We really wanted to share the variety of dining services and sense of style that The Vetted Table has to offer. The formal dining table featured both the elegance of a plated dinner as well as the communal bond of a family style meal.

The oyster bar highlighted our fresh and unique approach to the usually lackluster buffet stations. It featured freshly-schucked Baja oysters topped with passion fruit & lemongrass or shaved fennel & meyer lemon. It was quite the hit!

Our tray passed delights included a creamer potato bite stuffed with braised octopus & smoked paprika aioli, a classic steak tartare on a home made brioche toast, as well as the fresh baked swiss chard & pine nut emapanada with a sweet onion marmalade.

We were blessed with the splendid table styling and one of a kind rentals by The Hostess Haven.

Visit 100 Layer Cake for more fun from The Cream Event.

Special thanks to Rad + In Love and Paige Lowe for the beautiful photography.

THE DEBUT

 – August 2012 –

The Vetted Table was the beginning of a new chapter for Juan and myself (hi, my name is Kevin). It’s is something that we’ve dreamed about for a long time. So we knew we wanted the debut to be momentous. Our dream is to create fun, unique and memorable dining experiences. The four course dinner really exemplified our style of fresh ingredients, local sourcing and seasonal cuisine.

SUMMER GARDEN
olive, tomato, dirt, summer vegetables, ensenada olive oil

CORN SOUP & THE NEW BLACK
smoked shrimp, padrons, cheesecharrones

THE MATHEMATICIAN, THE VILLAIN
octopus, brisket, chorizo, preserved lemon, shelling beans, orach, almond, artichoke

SUMMER FRUITS
tomato, melons, nepitella, smoked salt

Each dish was paired with a one of a kind cocktail invented by the spectacular bartenders at El Take It Easy, who graciously let us re-imagine their restaurant for the evening.

The dishes and pairings were a hit, but we believe it takes so much more to make an experience truly special – something that lifts the spirit or touches the soul. So we called in some of our closest friends to lend their amazing talents.

It was later in the evening when Juan and I finally got a chance to sit down with our close friends and collaborators to enjoy the dinner. This is when it hit me. Celebrations are exciting for so many reasons. Your friends are dressed up and looking their best. Your curiosity is running wild with all the little details – the letterpressed cards, the thoughtful pieces of décor, the subtle flavors in a favorite dish.

But there’s a point when the music sets just the right mood, the lighting is perfect, the conversation is flowing, and so are the libations. It’s in these moments that you know you’re alive. We live for these moments and we can’t wait to share the next one with you.

We would like to give a special thanks to Mother Sponge for their endless support and boundless creativity.
